So, I started up a new single player game, and after walking for a good five minutes found an Island I wanted to live on. Later, I realized there was a natural tunnel beneath my island. It also had a huge vertical tunnel which lead straight down to diamond level. After exploring for ten minutes, I found:
3 and 1/2 stacks of Iron
Plenty of Redstone
6 Diamonds
Enormous amount of Coal
Obsidian Galore
And 8 blocks of Lapis.
And I haven't even finished exploring it. Pics below:
